Ingredients

Cheese:

  • 4 oz cream cheese, softened
  • ½ cup shredded mozzarella
  • ¼ cup feta (optional)

Optional Add-Ins:

  • Sun-dried tomatoes, chopped
  • Pine nuts, toasted
  • Fresh herbs: dill, parsley, or chives

Egg Wash:

  • 1 egg, beaten

Instructions
 

Prepare Puff Pastry:

  • Thaw pastry sheet and preheat oven to 400°F (200°C).
  • Roll pastry lightly if needed; cut into 12 squares.

Cook Spinach Filling:

  • Sauté garlic and onion until fragrant.
  • Add spinach and cook until wilted (or thawed frozen spinach, squeezed dry).
  • Season with salt, pepper, and nutmeg.

Combine Cheeses:

  • Mix sautéed spinach with cream cheese, mozzarella, and optional feta.
  • Add any optional extras like sun-dried tomatoes or herbs.

Assemble Puffs:

  • Spoon filling onto the center of each pastry square.
  • Fold over into triangles or rectangles, pressing edges to seal.

Apply Egg Wash:

  • Brush tops with beaten egg for a golden, shiny finish.

Bake:

  • Place on a parchment-lined baking sheet. Bake 15–20 minutes until golden brown and puffed.
