Ingredients
  

For the Pretzel Dough

  • 1 ½ cups warm water (110°F)
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 tablespoon sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons melted butter

For the Filling

  • 1 pound ground beef (80/20 recommended)
  • 1 cup cheddar cheese, cut into small cubes
  • ¼ cup finely diced onion (optional)
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon yellow mustard (optional)
  • Salt and black pepper to taste

For the Baking Soda Bath

  • 8 cups water
  • ½ cup baking soda

For Topping

  • 1 egg, beaten (egg wash)
  • Coarse pretzel salt

Instructions
 

Prepare the Dough

  • In a bowl, combine warm water, yeast, and sugar. Let sit 5 minutes until foamy. Add flour, salt, and melted butter. Mix and knead until smooth and elastic (about 5–7 minutes). Cover and let rise 1 hour or until doubled.

Cook the Filling

  • In a skillet over medium heat, cook ground beef with onion and garlic until browned. Drain excess grease. Stir in Worcestershire sauce, mustard, salt, and pepper. Let cool slightly.

Divide the Dough

  • Punch down the risen dough and divide into 16 equal portions.

Assemble

  • Flatten each portion into a circle. Add about 1 tablespoon of beef mixture and one cube of cheddar in the center. Pull dough edges over filling and pinch tightly to seal. Roll gently into a smooth ball.

Baking Soda Bath

  • Bring water to a gentle boil. Carefully add baking soda. Using a slotted spoon, dip each dough ball into the bath for 20–30 seconds. Remove and place on parchment-lined baking sheet.

Top and Bake

  • Brush with egg wash and sprinkle with coarse salt. Bake at 425°F (220°C) for 15–18 minutes or until deep golden brown.

Cool Slightly & Serve

  • Let rest 5–10 minutes before serving to allow cheese to set slightly.
