  • Rolling Pin
  • Baking sheet
  • Parchment paper
  • Fork (for sealing)
  • Pastry brush (optional)

Ingredients

  • 1 lb ground beef (lean or 80/20)
  • ½ cup chopped onion
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • 1 cup shredded cheese (cheddar, American, or mozzarella)
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • Optional: chopped pickles, bacon bits
  • 1 can refrigerated biscuit or pizza dough (or homemade pastry)
  • 1 egg (for egg wash) or 2 tbsp melted butter

Instructions

Brown the Beef

  • In a skillet over medium heat, cook ground beef and onions until beef is browned and onions are soft. Add salt, pepper, garlic powder, and paprika.

Mix the Filling

  • Remove from heat. Stir in shredded cheese, ketchup, mustard, and optional add-ins like pickles or bacon.

Prepare the Dough

  • Roll out dough into 4–6 inch rounds or squares. Place 2–3 tbsp of filling on one half of each piece.

Seal the Pockets

  • Fold dough over filling. Press edges with a fork to seal. Prick tops to release steam.

Bake

  • Place on a parchment-lined baking sheet. Brush tops with egg wash or melted butter. Bake at 375°F (190°C) for 15–20 minutes until golden brown.

Cool & Serve

  • Let cool slightly before serving. Enjoy with dipping sauces or sides.

Notes

  • Make Ahead: Freeze unbaked pockets on a tray, then store in a freezer bag. Bake from frozen with a few extra minutes.
  • Reheat: Use oven or air fryer for best texture. Avoid microwaving to prevent sogginess.
  • Customization: Swap beef for turkey, lentils, or plant-based crumbles. Add veggies like spinach or mushrooms.
  • Dough Options: Crescent roll dough adds a buttery flavor; whole wheat dough boosts nutrition.
