Ingredients
  

Carrot Cake Layer:

  • 1 cup all-purpose flour
  • 1 tsp baking soda

  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ground ginger
  • 2 large eggs
  • ½ cup vegetable oil
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 cup freshly grated carrots
  • ½ cup crushed pineapple (drained)
  • ½ cup chopped pecans or walnuts (optional)

Cheesecake Layer:

  • 16 oz full-fat cream cheese (room temp)
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Creamy Topping:

  • 1 cup sour cream or whipped cream
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract

Instructions
 

  • Preheat oven to 325°F (160°C). Line bottom of springform pan with parchment and lightly grease sides.
  • In a bowl, whisk flour, baking soda, baking powder, salt, and spices.
  • In another bowl, beat eggs, oil, sugars. Fold in carrots, pineapple, and nuts. Add dry ingredients and mix until just combined. Pour into pan.
  • Beat cream cheese until smooth. Add sugar, eggs, and vanilla. Mix gently until smooth. Pour over carrot cake layer.
  • Bake in a water bath for 60–70 minutes until center is set.
  • Turn off oven, crack door, and let cheesecake cool gradually.
  • Chill in fridge for at least 4 hours or overnight.
  • Mix topping ingredients and spread evenly over chilled cake.
  • Garnish with nuts or cinnamon. Slice with warm knife and serve.
