Ingredients
  

  • 1 cup finely grated carrots
  • 1 cup flour or oat flour (or almond flour for gluten-free)
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup raisins or shredded coconut (optional)
  • ½ cup brown sugar or maple syrup
  • 2 eggs (or flax eggs for vegan)
  • ¼ cup oil or nut butter
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • Pinch of salt
  • Optional frosting: cream cheese, powdered sugar, vanilla extract

Instructions
 

  • Prep Carrots: Grate carrots finely and set aside.
  • Mix Dry Ingredients: Combine flour, spices, salt, and nuts in a bowl.
  • Mix Wet Ingredients: Whisk eggs, sugar, and oil until smooth. Stir in grated carrots.
  • Combine: Mix wet and dry ingredients until a dough forms.
  • Shape Bites: Scoop small portions and roll into balls. For baked versions, place on a tray and bake at 350°F (175°C) for 10–12 minutes.
  • Finish: Chill no-bake bites until firm, or frost baked bites once cooled.
  • Serve: Garnish with coconut, nuts, or a drizzle of white chocolate.
