  • 1 cup red lentils, rinsed
  • 3 cloves garlic, minced

  • ½ tsp turmeric
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • Salt & black pepper, to taste
  • Juice of ½ lemon
  • Fresh parsley or cilantro, for garnish

Instructions
 

  • Caramelize Onions: Heat olive oil in a pot. Add onions and cook slowly over medium‑low heat, stirring occasionally, until golden brown (20 minutes).
  • Add Garlic & Spices: Stir in garlic, cumin, coriander, and turmeric. Cook for 1–2 minutes until fragrant.
  • Add Lentils & Broth: Stir in rinsed lentils and pour in broth. Mix well.
  • Simmer: Bring to a gentle simmer. Cook uncovered for 20–25 minutes, stirring occasionally, until lentils break down into a creamy texture.
  • Finish: Season with salt, pepper, and lemon juice. Garnish with fresh herbs. Serve hot with bread or salad.
