Instructions
 

  • Caramelise Onions: Heat butter and olive oil in a skillet. Add sliced onions and cook over medium-low heat, stirring occasionally, until golden brown (30–40 minutes).
  • Deglaze Pan: Pour in wine or broth, scraping up browned bits. Simmer until liquid reduces.
  • Cook Pasta: Boil pasta until al dente. Reserve 1 cup of pasta water.
  • Make Sauce: Stir broth and cream into onions. Add cheese and let melt into a creamy sauce.
  • Toss Pasta: Add pasta to the skillet, tossing to coat. Use reserved pasta water to adjust consistency.
  • Serve: Garnish with fresh thyme or parsley and extra cheese.
