Equipment

  • Mixing bowls
  • Electric mixer or whisk
  • Saucepan
  • Candy thermometer (for toffee)
  • Baking pan (9-inch round or square)
  • Parchment paper
  • Cooling rack

Ingredients

For the cake:

  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup whole milk

For the caramel sauce:

  • 1 cup granulated sugar
  • 6 tbsp unsalted butter
  • ½ cup heavy cream
  • Pinch of salt

For the toffee topping:

  • 1 cup granulated sugar
  • ½ cup unsalted butter
  • Optional: chopped nuts (pecans, almonds)

Instructions

  • Make cake batter: Cream butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla. Fold in flour, baking powder, and salt alternately with milk. Pour into lined baking pan.
  • Bake: Bake at 350°F (175°C) for 35–40 minutes, or until a skewer comes out clean. Cool slightly.
  • Prepare caramel sauce: Melt sugar over medium heat until amber. Add butter and cream slowly, whisking until smooth. Stir in salt.
  • Make toffee: Heat sugar and butter until golden and bubbling (300°F/150°C). Pour onto parchment, cool, then break into shards.
  • Assemble: Drizzle caramel over warm cake so it soaks in. Scatter toffee shards on top.
  • Optional garnish: Extra caramel drizzle or whipped cream.

Notes

  • Caramel tip: Cook slowly and stir constantly to avoid burning.
  • Toffee tip: Use parchment or silicone mats to prevent sticking.
  • Balance sweetness: Add a pinch of salt to caramel for depth.
  • Make ahead: Bake cake and caramel a day early; add toffee shards just before serving to keep crunch.
  • Variations: Add cocoa powder for chocolate caramel cake, or mix nuts into the toffee for extra texture.
