Caramel Topping:

  • 1 cup sugar
  • 6 tbsp butter
  • ½ cup heavy cream
  • ½ tsp salt (optional, for salted caramel)

Instructions
 

  • Prepare pan: Line a 9-inch springform pan with parchment. Preheat oven to 325°F (160°C).
  • Make brownie base: Whisk melted butter, sugar, eggs, vanilla, cocoa, flour, and salt until smooth. Spread into pan. Bake 20–25 minutes until set. Cool slightly.
  • Prepare cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then sour cream and vanilla. Pour over cooled brownie base.
  • Bake cheesecake: Place pan in a water bath. Bake 50–60 minutes until center is just set. Cool completely, then refrigerate at least 4 hours.
  • Make caramel: In saucepan, melt sugar over medium heat until golden. Add butter, stir until melted. Slowly whisk in cream. Simmer until smooth. Add salt if desired. Cool slightly.
  • Finish cheesecake: Pour cooled caramel over chilled cheesecake. Spread evenly.
  • Serve: Slice into 12 portions. Garnish with extra caramel drizzle or chocolate shavings.
