Ingredients
  

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 2 tbsp tomato paste
  • ½ cup chicken broth
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 4–6 sandwich buns, toasted
  • Fresh parsley or jalapeño slices for garnish

Instructions
 

  • Cook Chicken: Heat skillet with olive oil. Add ground chicken and cook until browned.
  • Add Vegetables: Stir in onion, bell pepper, and garlic. Cook until softened.
  • Season & Simmer: Add Cajun seasoning, tomato paste, and chicken broth. Simmer until thickened.
  • Make Cheese Sauce: In a saucepan, melt butter. Whisk in flour to form a roux. Slowly add milk, whisking until smooth. Stir in cheddar until creamy.
  • Toast Buns: Lightly butter and toast buns for crispness.
  • Assemble: Spoon Cajun chicken mixture into buns. Top with cheese sauce.
  • Garnish & Serve: Sprinkle with parsley or jalapeños. Serve hot.
