Ingredients
  

  • 2 cups cooked shredded chicken (rotisserie works well)
  • 1 cup shredded mozzarella or 8 mozzarella sticks
  • ½ cup buffalo sauce (hot sauce + melted butter)
  • 2 tbsp cream cheese or ranch dressing
  • 1 cup flour
  • 2 eggs, beaten
  • 2 cups seasoned breadcrumbs
  • Neutral oil for frying (vegetable or canola)
  • Optional: celery sticks, carrot sticks, ranch or blue cheese dip

Instructions
 

  • Make Filling: Mix shredded chicken with buffalo sauce and cream cheese/ranch until creamy. Stir in shredded mozzarella if not using string cheese.
  • Form Sticks: Shape mixture around mozzarella sticks or roll into logs. Place on a baking sheet and freeze for 30–60 minutes.
  • Bread the Sticks: Dredge each stick in flour, dip in beaten eggs, then coat with breadcrumbs. For extra crunch, repeat egg + breadcrumb step.
  • Cook:
    Fry: Heat oil to 350°F (175°C). Fry sticks for 2–3 minutes until golden.
    Bake: Preheat oven to 400°F (200°C). Bake 12–15 minutes until crisp.
    Air Fry: Cook at 375°F (190°C) for 8–10 minutes, flipping halfway.
  • Serve Hot: Plate with ranch or blue cheese dip, plus celery and carrot sticks for balance.
