Equipment

  • Large heavy-bottomed pot
  • Wooden spoon
  • Candy thermometer
  • Jars and lids
  • Potato masher or sieve

Ingredients

  • 4 cups fresh blackberries (or thawed frozen)
  • 3 cups granulated sugar
  • 2 tbsp lemon juice
  • 1 packet powdered pectin (optional, for firmer set)

Instructions

  • Prepare Berries: Rinse blackberries and remove stems. Toss with sugar to draw out juices.
  • Cook with Sugar & Acid: Place berries, sugar, and lemon juice in a pot. Mash lightly and simmer until juices release.
  • Add Pectin & Boil: Stir in pectin if using. Bring to a rolling boil, stirring constantly, until jam thickens and reaches 220°F.
  • Test Consistency: Place a spoonful on a chilled plate. If it wrinkles when pushed, it’s ready.
  • Jar & Seal: Pour hot jam into sterilized jars. Wipe rims, seal, and process in boiling water bath for 10 minutes.
