  • 9x13-inch baking dish
  • Mixing bowls
  • Whisk
  • Measuring Cups and Spoons
  • Spatula or wooden spoon
  • Pastry brush (for garlic butter)

Ingredients

Filling:

  • 3 cups shredded rotisserie chicken
  • 2 cups frozen mixed vegetables
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 3 tbsp butter
  • ¼ cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream

Seasonings:

  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • 1 tbsp chopped fresh parsley (or 1 tsp dried)

Biscuit Topping:

  • 1 package Red Lobster Cheddar Bay Biscuit mix (or homemade)
  • ¾ cup shredded cheddar cheese
  • ⅔ cup milk
  • ¼ cup melted butter
  • ½ tsp garlic powder

Optional Add-ins:

  • 2 oz cream cheese (for extra richness)
  • 1 tsp hot sauce (for heat)
  • ½ cup chopped green beans or mushrooms

Instructions

  • Preheat & Prep: Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • Make the Filling: In a large skillet, melt butter over medium heat. Add onion and garlic; sauté until soft (3–4 minutes). Stir in flour and cook for 1 minute to form a roux.
  • Add Liquids: Gradually whisk in chicken broth and cream. Simmer until thickened (5–7 minutes).
  • Combine Ingredients: Stir in chicken, vegetables, seasonings, and any optional add-ins. Pour mixture into the prepared baking dish.
  • Prepare Biscuit Topping: In a bowl, mix biscuit mix, cheddar, milk, and garlic powder until just combined. Drop spoonfuls of dough over the filling.
  • Bake: Bake uncovered for 25–30 minutes, until biscuits are golden and filling is bubbling.
  • Finish & Serve: Brush biscuits with melted garlic butter. Let rest 5–10 minutes before serving.

Notes

  • Don’t overmix biscuit dough—this keeps it light and fluffy.
  • Use a deep baking dish to prevent bubbling over.
  • Let filling cool slightly before topping to avoid soggy biscuits.
  • Taste and adjust seasoning before baking.
  • For extra cheesy flavor, use a blend of cheddar and Monterey Jack.
  • Reheat leftovers in the oven at 350°F to maintain biscuit texture.
