Equipment

  • 8x8-inch baking dish
  • Mixing bowls
  • Electric mixer or whisk
  • Measuring Cups and Spoons
  • Microplane or zester
  • Parchment paper (optional)

Ingredients

Brownies:

  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup unsalted butter, softened
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • ½ tsp baking powder
  • ¼ tsp salt

Glaze:

  • 1 cup powdered sugar
  • 2–3 tbsp fresh lemon juice
  • 1 tsp lemon zest (optional)

Instructions

  • Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment or grease lightly.
  • In a bowl, cream butter and sugar until light and fluffy.
  • Add eggs one at a time, then stir in lemon zest.
  • In a separate bowl, whisk flour, baking powder, and salt.
  • Gradually mix dry ingredients into wet mixture. Stir in lemon juice until smooth.
  • Pour batter into pan and smooth the top.
  • Bake for 20–25 minutes, until edges are golden and center is set.
  • Cool completely in pan.
  • Whisk glaze ingredients until smooth. Pour over cooled brownies and spread evenly.
  • Let glaze set for 15–20 minutes before slicing.

Notes

  • Use fresh lemon juice and zest for best flavor—bottled juice lacks brightness.
  • Zest lemons before juicing to avoid waste.
  • Don’t overmix the batter; stir just until combined.
  • Let glaze set fully before slicing to avoid smearing.
  • Store at room temp for 2–3 days, refrigerate up to 5 days, or freeze unglazed for 2 months.
