Ingredients
  

  • 4 boneless chicken breasts
  • 1 cup fresh blueberries (or thawed frozen)
  • 2 tbsp fresh thyme leaves (or 1 tsp dried)
  • ¼ cup balsamic vinegar
  • 2 tbsp honey (or maple syrup)
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Optional: 1 tsp soy sauce, lemon zest, chili flakes

Instructions
 

  • Season chicken with salt and pepper. Sear in skillet over medium-high heat until golden on both sides. Remove and set aside.
  • In a small saucepan, combine blueberries, balsamic vinegar, honey, garlic, and thyme. Simmer until berries burst and glaze thickens slightly.
  • Return chicken to skillet. Spoon glaze over each piece. Cook until internal temperature reaches 165°F.
  • Let chicken rest for 5 minutes before slicing.
  • Serve with extra glaze and garnish with fresh thyme and blueberries.

  • For extra brightness, add lemon zest to the glaze.
