Equipment

  • Grill or oven
  • Mixing bowls
  • Whisk or spoon
  • Skewers (wooden or metal)
  • Knife and cutting board

Ingredients

  • 1 ½ lbs boneless, skinless chicken thighs or breasts, cut into chunks
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • 1 tbsp olive oil
  • ½ cup mayonnaise (or Greek yogurt for lighter version)
  • ¼ cup sweet chili sauce
  • 2–3 tbsp sriracha (adjust to taste)
  • Salt and pepper to taste
  • Optional: bell peppers, zucchini, or onions for skewering

Instructions

  • Marinate Chicken: Mix soy sauce, garlic, lime juice, and olive oil. Toss chicken chunks and marinate for 30 minutes.
  • Prepare Sauce: In a bowl, whisk mayonnaise, sweet chili sauce, and sriracha until smooth. Adjust spice level.
  • Assemble Skewers: Thread chicken onto skewers. Add vegetables if desired.
  • Cook: Grill over medium heat for 12–15 minutes, turning occasionally. Alternatively, bake at 400°F (200°C) for 20 minutes.
  • Finish: Brush skewers with bang bang sauce just before serving. Serve extra sauce on the side for dipping.
  • Expert Tip: Don’t add sauce too early—it can burn on the grill. Always finish with sauce after cooking.

Notes

  • Use chicken thighs for juicier skewers; breasts for leaner option.
  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Sauce can be made ahead and stored in the fridge for up to 3 days.
  • For a vegetarian twist, swap chicken for tofu or mushrooms.
  • Garnish with sesame seeds and scallions for a restaurant-style finish.
