For the Chicken:

- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tbsp olive oil
For the Glaze:
- ½ cup balsamic vinegar
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tsp Dijon mustard (optional)
- 1 tbsp olive oil
- ½ tsp dried thyme
For the Veggies & Cheese:
- 1 pint grape tomatoes
- 1 medium red onion, sliced
- 8 oz fresh mozzarella (sliced or shredded)
- Optional: 2 tbsp grated Parmesan, fresh basil, lemon zest
Preheat oven to 400°F (200°C).
Pound chicken breasts to even thickness. Season with salt, pepper, garlic powder, oregano, and basil.
Prepare glaze: In a saucepan, combine balsamic vinegar, brown sugar, garlic, olive oil, thyme, and Dijon (if using). Simmer until thickened (about 5–7 minutes).
Toss tomatoes and onions in a spoonful of glaze.
