Instructions

  • Mix dry ingredients: In a bowl, whisk flour, baking soda, salt, and oats.
  • Cream butter & sugars: In a separate bowl, beat butter with brown sugar and granulated sugar until light and fluffy.
  • Add eggs & vanilla: Mix in eggs one at a time, then add vanilla.
  • Combine wet & dry: Gradually add dry ingredients to wet mixture until just combined.
  • Fold in pecans: Stir in toasted pecans.
  • Chill dough: Cover and refrigerate for at least 30 minutes.
  • Scoop & bake: Scoop dough onto parchment-lined baking sheet. Bake at 350°F for 10–12 minutes until edges are golden but centers are soft.
  • Cool & serve: Let cookies cool on sheet for 5 minutes, then transfer to a wire rack.
