Equipment

  • Baking dish (8×8 or 9×13 inch)
  • Mixing bowls
  • Sharp knife and cutting board
  • Cheese grater
  • Whisk
  • Oven mitts
  • Optional: food processor for breadcrumbs or cheese blends

Ingredients

  • 4–5 medium yellow squash, sliced 1/4-inch thick
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup milk or cream (optional for extra creaminess)
  • 1–2 cloves garlic, minced (optional)
  • 1 small onion, finely chopped (optional)
  • 1/4 cup breadcrumbs (optional, for topping)
  • 1–2 tsp fresh herbs (thyme, parsley, or rosemary, optional)
  • Salt and pepper, to taste
  • 1–2 tbsp melted butter (optional, for topping)

Instructions

  • Preheat Oven: Preheat oven to 375°F (190°C). Grease the baking dish with butter or cooking spray.
  • Prepare Squash: Wash and trim the squash, then slice evenly into 1/4-inch rounds.
  • Mix Ingredients: In a large bowl, combine squash with shredded cheeses, milk/cream (if using), garlic, onion, salt, pepper, and herbs. Toss gently to coat.
  • Assemble Dish: Layer or toss the squash mixture evenly in the prepared baking dish.
  • Add Toppings: Sprinkle breadcrumbs, extra cheese, and melted butter on top if desired.
  • Bake: Bake for 25–35 minutes, until squash is tender and cheese is melted, bubbly, and slightly golden.
  • Rest & Serve: Let rest for 5 minutes before serving. Garnish with fresh herbs if desired.

Notes

  • Cheese Variations: Use any combination of cheddar, mozzarella, or Parmesan. Plant-based cheeses work for a dairy-free option.
  • Spicy Twist: Add red pepper flakes or smoked paprika for heat.
  • Make-Ahead: Assemble the dish and refrigerate until ready to bake. Bake just before serving.
  • Avoid Sogginess: Slice squash evenly and drain excess water if needed. Bake until tender but not mushy.
  • Serving Ideas: Perfect with roasted meats, pasta, rice, or as part of a holiday buffet.
