Ingredients
  

  • 1 lb Italian sausage (spicy or mild)
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 6 cups chicken or vegetable broth
  • 4 medium potatoes, thinly sliced
  • 4 cups kale, chopped
  • 1 cup heavy cream
  • Salt & pepper to taste
  • Optional: pancetta, cannellini beans, fresh herbs (thyme, rosemary)

Instructions
 

  • Brown sausage: Heat olive oil in a large pot. Add sausage, breaking into crumbles. Cook until browned.
  • Sauté aromatics: Add onion and garlic. Cook until fragrant and golden.
  • Add broth & potatoes: Pour in broth. Add potatoes and simmer 15–20 minutes until tender.
  • Add kale: Stir in chopped kale. Cook 5 minutes until wilted.
  • Finish with cream: Reduce heat. Stir in cream gently. Do not boil.
  • Season & serve: Adjust salt and pepper. Ladle into bowls and serve hot with crusty bread.
