Ingredients
  

  • 4 bone-in pork chops (about 1 inch thick)
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 4 garlic cloves, minced
  • 1 can (28 oz) crushed San Marzano tomatoes (or fresh equivalent)
  • ½ cup red or white wine
  • 2 tbsp capers (or olives)
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • Fresh parsley or basil for garnish

Instructions
 

  • Sear Pork Chops: Heat olive oil in skillet over medium-high heat. Season chops with salt and pepper, then sear on both sides until golden. Remove and set aside.
  • Sauté Aromatics: Add onions and garlic to the skillet. Cook until softened and fragrant.
  • Deglaze with Wine: Pour in wine, scraping up browned bits. Let reduce slightly.
  • Add Tomatoes & Seasoning: Stir in crushed tomatoes, oregano, and capers. Season to taste.
  • Simmer: Return pork chops to skillet. Cover and simmer gently for 30–40 minutes, turning occasionally, until tender.
  • Rest & Serve: Remove from heat, let rest 5 minutes. Garnish with parsley or basil. Serve with bread, pasta, or roasted vegetables.
