Ingredients
  

  • 1 ½ lbs boneless, skinless chicken thighs or breasts
  • 2 ripe mangoes (peeled and diced)
  • 3 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1–2 tsp chili flakes (adjust to taste)
  • 1 tbsp oil (vegetable or sesame)
  • 1 tbsp honey (optional, for extra sweetness)
  • Sesame seeds and scallions for garnish

Instructions
 

  • Prep Chicken: Pat chicken dry and season lightly with salt and pepper.
  • Make Mango Glaze: Blend mango into a smooth puree. In a saucepan, combine puree with soy sauce, garlic, ginger, chili flakes, and honey. Simmer until slightly thickened.
  • Cook Chicken: Heat oil in skillet or grill pan. Sear chicken over medium-high heat until golden brown and nearly cooked through.
  • Coat with Glaze: Pour mango glaze over chicken. Reduce heat and simmer until chicken is fully cooked and glaze becomes sticky.
  • Garnish & Serve: Sprinkle with sesame seeds and scallions. Serve hot with rice, noodles, or vegetables.
