Instructions
 

Prepare the Chicken

  • Slightly flatten the chicken breasts for even cooking.
    In a mixing bowl, combine olive oil, lime juice & zest, garlic, chili powder, paprika, salt, and pepper.
    Marinate chicken 20–30 minutes (or up to overnight for extra flavor).

Cook the Chicken

  • Heat skillet or grill pan over medium-high heat.
    Sear chicken 3–4 minutes per side until golden brown.
    For thicker breasts, finish in oven at 375°F (190°C) until internal temperature reaches 165°F (74°C).

Add Cheese & Toppings

  • Top chicken with shredded cheese and melt under broiler or in oven.
    Spoon fresh pico de gallo over cheese.
    Add optional tortilla strips or avocado slices.

Garnish & Serve

  • Sprinkle with fresh cilantro.
    Serve with lime wedges and sides like cilantro-lime rice, black beans, or roasted vegetables.
