Ingredients
  

Crust:

  • 2 cups graham cracker crumbs (or digestive biscuits)
  • ½ cup melted butter
  • 2 tbsp sugar

Apple Layer:

  • 3 tart apples (Granny Smith or Honeycrisp), peeled and sliced
  • ¼ cup sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice

Cheesecake Filling:

  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract

Crumble Topping:

  • 1 cup flour
  • ½ cup brown sugar
  • ½ cup butter, chilled and cubed
  • ½ cup chopped pecans (optional)

Instructions
 

  • Prepare Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into springform pan and chill.
  • Cook Apples: In a saucepan, cook apples with sugar, cinnamon, and lemon juice until tender. Drain excess liquid.
  • Make Filling: Beat cream cheese, sugar, eggs, and vanilla until smooth. Pour over crust.
  • Layer Apples: Spread cooked apples evenly over cheesecake filling.
  • Add Crumble: Mix flour, brown sugar, and butter until crumbly. Stir in pecans if using. Sprinkle over apples.
  • Bake: Bake at 325°F (160°C) for 55–65 minutes, until center is set but slightly jiggly.
  • Cool & Chill: Cool completely, then refrigerate overnight before serving.
