Ingredients
  

Cajun Shrimp Ingredients:

  • 2 tablespoons olive oil, divided
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 tablespoon finely chopped cilantro, plus more for garnish
  • 2 garlic cloves, finely minced
  • 1 kilo shrimp, peeled and deveined

To prepare the avocado:

  • 1 English cucumber, cut into 22 episodes
  • 1 tablespoon lemon juice, plus more for a squeeze of ready-made appetizer
  • 1/4 teaspoon salt
  • 1 avocado

Instructions
 

How to make Cajun Shrimp:

  • Place the shrimp in a large mixing bowl and pat dry with paper towels. Add minced garlic, 1 tablespoon cilantro, 1 teaspoon paprika, 1/2 teaspoon cayenne pepper, 1/2 teaspoon salt, 1/4 teaspoon black pepper and 1 tablespoon olive oil. Stir well until combined.
  • Heat a large, heavy skillet over medium/high heat with 1 tablespoon olive oil. Once the oil is hot, add the shrimp in a single layer and fry for 2 minutes per side or until completely cooked through.

How to prepare and assemble an avocado:

  • In a small bowl, mash 1 avocado, 1/4 teaspoon salt, and 1 tablespoon lemon juice until creamy. Divide the avocado mixture into 20-22 cucumber slices.
  • Smear fresh lemon juice over shrimp and avocado and garnish with finely chopped cilantro. If not serving immediately, cover and refrigerate up to 4 hours before serving.

    Made these for Christmas potluck and they were both delicious and a big hit. Very festive. I’d suggest mashing your avocado first then adding the lime juice. Mine came out a little runny and tended to slide of the cucumber slice. Yum!

    This looks delicious and about to cook it to bring to a party. Do I want to serve the shrimp cooled or recently cooked (warm)?

    Make certain that if using frozen shrimp to slit down the back and remove the vein. I am cooking the shrimp ahead of time and letting it cool. Then, I am waiting an hour prior to leaving for the party to slice the cucumber and make the avocado spread. That way they are fresh prior to serving. Placing on an antique platter to make it festive!

    If you don’t care about it being Keto, or paleo, make the same recipe, but instead of serving it on cucumbers try putting it on a tortilla chip! OMG TO DIE FOR
