
Savory Tomato Zucchini & Rice Casserole – Easy, Flavorful, and Comforting

Ingredients
Base
- 1½ cups uncooked rice (long-grain or short-grain)
- 3 cups water or vegetable broth (for cooking rice)
Vegetables & Aromatics
- 2 medium zucchini, diced
- 2 cups diced tomatoes (fresh or canned)
- 1 small onion, finely chopped (optional)
- 2 cloves garlic, minced
- 1 bell pepper, diced (optional)
Cheese & Herbs
- 1 cup shredded mozzarella or cheddar
- ½ cup grated Parmesan or feta
- 2 tsp dried basil or 2 tbsp fresh basil, chopped
- 1 tsp dried oregano or 1 tbsp fresh oregano
- Salt and black pepper, to taste
- ½ tsp paprika (optional)
Optional Topping
- ¼ cup breadcrumbs
- 2 tbsp grated Parmesan
Instructions
- Cook Rice: Prepare rice according to package instructions. Slightly undercook if desired, as it will finish baking in the casserole.
- Sauté Vegetables: Heat 1 tbsp olive oil in a skillet over medium heat. Sauté zucchini, tomatoes, onions, garlic, and bell peppers (if using) until softened. Lightly salt zucchini to remove excess water.
- Combine Ingredients: In a mixing bowl, combine cooked rice, sautéed vegetables, ¾ of the cheese, herbs, paprika, salt, and pepper. Mix gently.
- Assemble Casserole: Transfer mixture to prepared 9×13-inch baking dish. Top with remaining cheese and optional breadcrumb topping.
- Bake: Preheat oven to 375°F (190°C). Cover with foil and bake 20 minutes, then remove foil and bake 10–15 minutes until bubbly and golden on top.
- Rest & Serve: Allow casserole to cool 5–10 minutes before serving.

- Moisture Management: Lightly salt zucchini and drain excess liquid to prevent soggy casserole.
- Protein Additions: Add cooked chicken, sausage, or beans to make it a full meal.
