Roasted potatoes, onions and carrots

Ingredients

  • 5 carrots, cut diagonally into 1/2-inch slice
  • 4 medium white potatoes, cut into bite-size pieces
  • 1 medium vidalia onion, cut into 8
  • 2 cloves garlic, diced
  • 6 tablespoons butter, melted
  • salt pepper

Instruction

  1. Preheat oven 425 degrees.
  2. Combine carrots, potatoes, onion, and garlic with melted butter in an 8×8″ square glass dish.
  3. Seasoning with salt also pepper, mix.
  4. Cover the dish with aluminum foil and bake for 45 minutes.
  5. Uncover, stir, and continue cooking for another 30 minutes (or until golden brown to your satisfaction), stirring occasionally to lift the bottom portions to the top to allow them to brown and crisp.
