ricotta pancakes



  • 1 egg
  • 20g milk
  • 30g plain flour
  • 10g sugar
  • 100g ricotta cheese
  • 1g baking powder
  • 25g crème fraiche
  • 35g blueberries
  • Honey


  1. Pre-heat two small pancake pans and add a little clarified butter to both
  2. Weigh out 75g of pancake mix for each pan
  3. Add the batter to the pans and cook on a medium heat until golden brown
  4. Flip over and cook on the other side until golden brown and fluffy
  5. Serve with crème fraiche, London honey and blueberries
