PORK CHOPS WITH SCALLOPED POTATOES

Ingredients

  • 5 potatoes, white or Yukon Gold
  • 5 pork chops
  • 1 onion sliced or diced
  • 1 cup whole milk
  • 3 cups Cheddar Cheese, shredded
  • 3 tbsp butter, unsalted
  • Salt and pepper to taste
  • Optional: I add chives or green onions, a sprinkle of seasoning salt and a pinch of garlic salt to boost the bland flavor

Instructions

  1. Peel and slice the potatoes, no more than ¼ inch each slice
    Peel and quarter the onion, split each quarter in half
  2. Use a block of Cheddar Cheese, shred it freshly
  3. Preheat the oven to 350*
  4. Spray a baking dish
    In a large bowl, combine the potatoes, onions, cheese and the milk, I also add in the seasonings at this time
  5. Mix all together to combine well
  6. Put this mix into the prepared baking pan
  7. Slice the butter into equal slices and lay on top of the potato mix
  8. Place the pork chops on top of the cheese and potato mixture
  9. Bake for 50 to 55 minutes at 350*
  10. Halfway through the cooking time, flip the pork chops over
  11. Check the pork to ensure it is no longer pink, if it is, continue baking for another 15 minutes.
  12. Stab the potatoes with a fork to check for tenderness. If they also need longer, cover the baking pan with aluminum foil to prevent the meat from drying out.
