Ingredients
Banana Bread Batter:
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 3–4 overripe bananas, mashed
- 1/2 cup creamy peanut butter
- 2 large eggs
- 1/2 cup granulated sugar (or preferred sweetener)
- 1 tsp vanilla extract (optional)
Swirl:
- 1/2 cup jelly or jam (raspberry, strawberry, or favorite flavor)
Optional Add-ins:
- 1/4 cup chopped peanuts or walnuts
- 1/4 cup chocolate chips
Instructions
- Preheat Oven: Set oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line with parchment paper.
- Mix Dry Ingredients: In a medium bowl, combine flour, baking soda, and salt.
- Mix Wet Ingredients: In a large bowl, mash bananas and stir in peanut butter, eggs, sugar, and vanilla until smooth.
- Combine: Gradually fold dry ingredients into wet until just incorporated. Avoid overmixing.
- Add-ins: Fold in chopped nuts or chocolate chips if desired.
- Layering Jelly: Pour half the batter into the loaf pan, dollop half of the jelly, and gently swirl. Add remaining batter and jelly, swirling lightly.
- Bake: Bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean.
- Cool: Allow to cool in pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and serve.
