One Pot Cajun Chicken Pasta Recipe

This One Pot Cajun Chicken Pasta is a flavorful and easy dish that combines tender chicken, pasta, and a creamy Cajun sauce, all cooked together in one pot for quick cleanup!

Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning (adjust to taste)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 bell pepper (red or green), diced
  • 3 cloves garlic, minced
  • 1 cup (240ml) chicken broth
  • 1 cup (240ml) heavy cream
  • 12 oz (340g) penne pasta
  • 1 cup (150g) cherry tomatoes, halved
  • Salt and pepper to taste
  • Chopped fresh parsley or green onions for garnish
  • Parmesan cheese for serving (optional)

Instructions:

  1. Season the Chicken:
    • In a bowl, toss the chicken pieces with Cajun seasoning, ensuring they are evenly coated.
  2. Sauté the Chicken:
    • In a large pot or skillet, heat the olive oil over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
  3. Sauté Vegetables:
    • In the same pot, add the diced onion and bell pepper. Cook for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute.
  4. Add Liquid and Pasta:
    • Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer, then add the penne pasta.
  5. Cook the Pasta:
    • Cover the pot and cook on medium heat for about 12-15 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.
  6. Combine and Finish:
    • Return the cooked chicken to the pot, along with the halved cherry tomatoes. Stir everything together and let it cook for an additional 2-3 minutes to heat through. Adjust seasoning with salt and pepper to taste.
  7. Serve:
    • Garnish with chopped fresh parsley or green onions and serve with grated Parmesan cheese if desired.

Tips:

  • Adjust Spice Level: You can adjust the amount of Cajun seasoning according to your spice preference.
  • Add Veggies: Feel free to add more veggies, like spinach or zucchini, for extra nutrition.
  • Leftovers: Store leftovers in an airtight container in the refrigerator for up to 3 days.

Enjoy your hearty and delicious One Pot Cajun Chicken Pasta!
