🕒 Time:

  • Prep: 20 minutes

  • Chill: 1 hour

  • Serves: 4–6

Ingredients:

For the Cheesecake Layer:

  • 8 oz (225 g) cream cheese, softened

  • 1/2 cup powdered sugar

  • 1 tsp vanilla extract

  • 1 cup heavy whipping cream (or store-bought whipped topping)

For the Strawberry Layer:

  • 1 1/2 cups fresh strawberries, diced

  • 1–2 tbsp sugar (adjust to taste)

  • 1 tsp lemon juice

  • Optional: a few strawberry slices for garnish

For the Crust Layer:

  • 1 cup graham cracker crumbs

  • 3 tbsp melted butter

  • 1 tbsp sugar (optional)

Instructions:

  1. Prepare the Strawberries:

    • Toss diced strawberries with sugar and lemon juice in a bowl. Let sit for 10–15 minutes to macerate and release juices.

  2. Make the Cheesecake Filling:

    • In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth and fluffy.

    • In a separate bowl, whip the cream until stiff peaks form, then gently fold into the cream cheese mixture. (Or fold in whipped topping if using.)

  3. Make the Crumb Base:

    • Mix graham cracker crumbs, melted butter, and sugar. Stir until combined and crumbly.

  4. Assemble the Parfaits:

    • In cups or jars, layer graham cracker crumbs, a spoonful of cheesecake filling, then strawberries.

    • Repeat layers if desired and finish with a dollop of cheesecake and a few strawberry slices on top.

  5. Chill:

    • Refrigerate for at least 1 hour to set and allow flavors to blend.

Tips:

  • Want extra decadence? Add a drizzle of chocolate or white chocolate sauce between layers.

  • Make ahead for parties—just cover and chill up to 24 hours in advance.
