Ingredients:

  • 1 lb ground beef (or chicken or turkey)
  • 1 packet taco seasoning
  • 1/4 cup water
  • Tortilla chips (about 10 oz)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • 1 can black beans, drained and rinsed (optional)
  • 1 cup fresh tomatoes, diced
  • 1/2 cup red onion, diced
  • 1/4 cup pickled jalapeños (or fresh jalapeños for extra heat)
  • 1/2 cup sour cream
  • 1/2 cup guacamole
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1-2 tablespoons fresh lime juice
  • Salsa or pico de gallo, for serving

Instructions:

1. Cook the ground beef:

  • In a large skillet, cook the ground beef over medium heat until browned and fully cooked. Drain any excess fat.
  • Stir in the taco seasoning and 1/4 cup of water. Cook for 2-3 minutes, allowing the flavors to blend. Set aside.

2. Assemble the nachos:

  • Preheat your oven to 375°F (190°C).
  • Spread a generous layer of tortilla chips on a large baking sheet or oven-safe platter.
  • Evenly distribute the seasoned ground beef over the chips. Sprinkle the black beans (if using) on top.
  • Generously sprinkle the shredded cheese over the beef and beans.

3. Bake the nachos:

  • Place the nachos in the oven and bake for about 8-10 minutes, or until the cheese is melted and bubbly.

4. Add the toppings:

  • Once the nachos are out of the oven, top them with the diced tomatoes, red onions, pickled jalapeños, and black olives (if using).
  • Add dollops of sour cream and guacamole, and drizzle with lime juice for a burst of freshness.
  • Garnish with freshly chopped cilantro.

5. Serve:

  • Serve the loaded nachos with salsa or pico de gallo on the side, or drizzle some over the nachos.

Tips:

  • Customize: Feel free to swap the ground beef for chicken, pork, or beans for a vegetarian option.
  • Cheese: For the best melt, use freshly shredded cheese instead of pre-shredded.
  • Layering: For extra cheesy nachos, make multiple layers of chips, beef, and cheese.
  • Serve immediately: Nachos are best enjoyed hot and fresh, so serve them right after baking.

These Loaded Nachos are sure to be a hit with their combination of seasoned beef, melty cheese, and fresh toppings. Perfect for sharing or indulging solo!
