Loaded Mashed Potato and Meatball Casserole
This Loaded Mashed Potato and Meatball Casserole is the ultimate comfort food—creamy mashed potatoes layered with savory meatballs, gooey cheese, and all your favorite baked potato toppings. It’s easy to prepare, perfect for weeknights, and loved by both kids and adults alike!
Ingredients:
For the Meatballs:

1 lb ground beef (or pork/beef mix)

1 egg

½ cup breadcrumbs

¼ cup milk
-
2 cloves garlic, minced

1 tsp onion powder
-
Salt & pepper to taste

1 tbsp Worcestershire sauce

Optional: ¼ cup grated Parmesan cheese
For the Mashed Potatoes:

2 lbs potatoes (Yukon Gold or Russet), peeled and chopped

4 tbsp butter
-
½ cup sour cream
-
½ cup milk or cream
-
Salt & pepper, to taste

Optional: ½ cup shredded cheddar mixed in
Toppings:

1 ½ cups shredded cheddar cheese
-
4–6 slices cooked bacon, chopped

¼ cup chopped green onions or chives
-
Sour cream, for serving
Instructions:

Make the mashed potatoes:

Boil potatoes in salted water until tender (about 15–20 minutes).

Drain and mash with butter, sour cream, milk, and salt/pepper. Set aside.

Prepare and cook meatballs:

Preheat oven to 400°F (200°C).

In a bowl, mix all meatball ingredients until just combined.

Form into small meatballs and place on a baking sheet.

Bake for 15–18 minutes, until cooked through and browned.

Assemble the casserole:

Spread mashed potatoes in a greased 9×13-inch baking dish.

Nestle cooked meatballs on top of the potatoes.

Sprinkle shredded cheddar cheese evenly over everything.

Add chopped bacon on top.

Reduce oven temp to 375°F (190°C).

Bake uncovered for 15–20 minutes, or until cheese is melted and bubbly.
