Greek Chicken Bowls

Greek Chicken Bowls are a fresh and flavorful meal that combines marinated chicken, vibrant veggies, and creamy tzatziki, all layered over a bed of rice or quinoa. This dish is perfect for meal prep or a healthy weeknight dinner.

Ingredients:

For the Chicken Marinade:

  • 1 lb (450g) boneless, skinless chicken breasts or thighs
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 garlic cloves, minced

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1 small cucumber, grated and squeezed to remove excess water
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill (or 1 teaspoon dried)
  • Salt and pepper to taste

Instructions:

  1. Marinate the Chicken:
    • In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, cumin, salt, and pepper.
    • Place the chicken in a resealable bag or bowl, pour the marinade over, and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
  2. Cook the Chicken:
    • Heat a grill pan or skillet over medium heat and cook the marinated chicken for about 5-6 minutes on each side, or until fully cooked. Let the chicken rest for a few minutes before slicing.
