This Easy Mexican Beef Mince Bake is a comforting, cheesy dish that’s perfect for a weeknight dinner. It combines ground beef with Mexican spices, beans, and cheese, all baked together to create a delicious meal.

Ingredients:

  • 1 lb (450g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (red or green)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes (with green chilies if desired)
  • 1 packet (1 oz) taco seasoning (or homemade)
  • 1 cup (240ml) beef broth (or water)
  • 1 cup (8 oz) shredded cheese (cheddar or Mexican blend)
  • 1 cup (8 oz) sour cream
  • 2 cups tortilla chips (optional)
  • Fresh cilantro, chopped (for garnish)
  • Salt and pepper, to taste

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

2. Cook the Beef:

  • In a large skillet, over medium heat, add the ground beef, onion, and garlic. Cook until the beef is browned and cooked through, about 5-7 minutes.
  • Drain excess fat if necessary.

3. Add Vegetables and Seasoning:

  • Add the bell pepper, black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine.
  • Pour in the beef broth, and let it simmer for about 5 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

4. Assemble the Bake:

  • In a greased baking dish (around 9×13 inches), spread half of the tortilla chips (if using) on the bottom.
