Easy Lasagna Cups

Lasagna cups are a delightful twist on traditional lasagna, made by layering lasagna noodles, ricotta cheese, marinara sauce, and mozzarella in a muffin tin. Here’s a basic recipe to get you started:

Ingredients:

  • Lasagna noodles (around 12 noodles)

  • 1 cup ricotta cheese

  • 1 cup marinara sauce

  • 1 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon dried basil

  • Salt and pepper to taste

  • Cooking spray or olive oil for greasing

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray or olive oil.

  2. Prepare the Noodles: Cook the lasagna noodles according to the package instructions until al dente. Drain and lay them out on a clean surface.

  3. Assemble the Cups:

    • Cut each lasagna noodle in half crosswise.

    • Place one half into each muffin cup, overlapping the edges to fit and creating a cup shape.

  4. Layer the Fillings:

    • Spoon a small amount of marinara sauce into the bottom of each noodle cup.

    • Add a spoonful of ricotta cheese on top of the sauce in each cup.

    • Sprinkle a little mozzarella cheese over the ricotta.

    • Repeat the layers: sauce, ricotta, and mozzarella until each cup is filled. Finish with a sprinkle of Parmesan cheese on top.

  5. Bake: Place the muffin tin in the oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly, and the edges of the noodles are golden brown.

  6. Serve: Remove from the oven and let cool for a few minutes before carefully removing the lasagna cups from the muffin tin. Serve warm, garnished with fresh basil or parsley if desired.
