Corn and Cheese Fritters

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 c grated Parmesan cheese
  • 1/4 c green onions
  • 1/2 cup corn kernels (fresh or frozen)
  • 1 large egg
  • 1/4 cup milk
  • 1/4 cup vegetable oil for frying
  • grated cheddar cheese for garnish (optional)

Instructions:

  1. In a medium mixing bowl, combine the flour, cornmeal, baking powder, salt, pepper, parmesan and green onions.
  2. Stirring in corn kernels, egg also milk until well combined.
  3. Heat oil in  skillet on medium-high heat.
  4. Using a spoon or a small ice cream spoon, place the spoonfuls of dough in the hot oil.
  5. Fry the doughnuts for 2 to 3 minutes per side or until golden and crispy.
  6. Remove the doughnuts from the oil with a slotted spoon and place on a baking sheet lined with paper towels to drain any excess oil.
  7. If desired, sprinkle the grated cheddar cheese over the doughnuts while they are still warm.
  8. Serving hot doughnuts with your favourite sauce.
