Cheeseburger Eggrolls

Crispy on the outside, juicy and cheesy on the inside! These Cheeseburger Eggrolls are stuffed with seasoned ground beef, melty cheese, and tangy pickles, giving you that perfect burger bite in a crunchy eggroll wrapper. Perfect for snacks, parties, or a creative dinner twist.

Ingredients:

  • 1 lb ground beef

  • ½ small onion, finely diced

  • 1 cup shredded cheddar cheese (or American cheese slices, diced)

  • ¼ cup ketchup

  • 1 tbsp yellow mustard

  • ¼ cup chopped pickles

  • 12 eggroll wrappers

  • Salt and pepper to taste

  • Oil, for frying

Optional for dipping:

  • Burger sauce, ranch, or spicy mayo

Instructions:

  1. Cook the Filling:

    • In a skillet over medium heat, cook ground beef and onion until browned and cooked through. Drain excess fat.

    • Stir in ketchup, mustard, pickles, salt, and pepper.

    • Remove from heat and let cool slightly.

    • Stir in the shredded cheese.

  2. Assemble the Eggrolls:

    • Lay out an eggroll wrapper with a corner facing you (diamond shape).

    • Spoon about 3 tablespoons of filling near the center.

    • Fold the bottom corner over the filling, fold in the sides, and roll up tightly. Seal the edge with a little water.

    • Repeat with remaining wrappers.

  3. Fry the Eggrolls:

    • Heat oil in a deep pan or fryer to 350°F (175°C).

    • Fry eggrolls in batches until golden brown and crispy, about 3-4 minutes per side.

    • Drain on paper towels.

  4. Serve:

    • Serve hot with your favorite dipping sauce.

Optional Variations:

  • Add cooked bacon bits to the filling for Bacon Cheeseburger Eggrolls.

  • For a spicy kick, add diced jalapeños.

  • Try air-frying at 400°F (200°C) for 8-10 minutes, flipping halfway.
