Ingredients:

  • 1 lb (450g) chicken breast or thighs, sliced into thin strips
  • 2 tablespoons vegetable oil
  • 2-3 tablespoons green curry paste (adjust to taste)
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 1-2 tablespoons fish sauce (adjust to taste)
  • 1 tablespoon brown sugar
  • 1 cup sliced bamboo shoots (optional)
  • 1 cup baby corn (optional)
  • 1 red bell pepper, sliced
  • 1 cup green beans, trimmed and cut in half
  • 1 cup sliced zucchini
  • Fresh basil leaves, for garnish
  • Cooked jasmine rice, for serving

Instructions:

  1. Prepare the Chicken: Slice the chicken breast or thighs into thin strips and set aside.
  2. Heat Oil and Curry Paste: In a large pan or wok, heat the vegetable oil over medium heat. Add the green curry paste and cook for 2-3 minutes, stirring frequently, until fragrant.
  3. Add Chicken: Add the sliced chicken to the pan and stir to coat with the curry paste. Cook for about 5 minutes, until the chicken is no longer pink.
  4. Add Coconut Milk and Broth: Pour in the coconut milk and chicken broth. Stir to combine and bring to a gentle simmer.
  5. Season: Add the fish sauce and brown sugar. Stir well to incorporate.
  6. Add Vegetables: Add the bamboo shoots, baby corn, red bell pepper, green beans, and zucchini. Simmer for 10-15 minutes, until the vegetables are tender and the chicken is cooked through.
  7. Adjust Seasoning: Taste the curry and adjust the seasoning with more fish sauce or sugar if needed.
  8. Garnish and Serve: Remove from heat and stir in fresh basil leaves. Serve the curry hot over cooked jasmine rice.
