Ingredients
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 c grated Parmesan cheese
- 1/4 c green onions
- 1/2 cup corn kernels (fresh or frozen)
- 1 large egg
- 1/4 cup milk
- 1/4 cup vegetable oil for frying
- grated cheddar cheese for garnish (optional)
Instructions:
- In a medium mixing bowl, combine the flour, cornmeal, baking powder, salt, pepper, parmesan and green onions.
- Stirring in corn kernels, egg also milk until well combined.
- Heat oil in skillet on medium-high heat.
- Using a spoon or a small ice cream spoon, place the spoonfuls of dough in the hot oil.
- Fry the doughnuts for 2 to 3 minutes per side or until golden and crispy.
- Remove the doughnuts from the oil with a slotted spoon and place on a baking sheet lined with paper towels to drain any excess oil.
- If desired, sprinkle the grated cheddar cheese over the doughnuts while they are still warm.
- Serving hot doughnuts with your favourite sauce.
