Ingredients
- 1 kg skinned and deboned chicken cubes
- 1/2 cup fresh ginger
- 1/2 cup shallots
- 5 cloves garlic
- 3 tablespoons cornstarch
- 1 tablespoon oyster sauce
- 1 tablespoon salt
- 1 tablespoon sesame oil
- 1 tablespoon chopped garlic
- Plum sauce mix (1/2 cup plum sauce, 2 tablespoons
tomato paste, 2 tablespoons vinegar, - 2 tablespoons sugar and 1/2 cup chicken or water)
- 2 to tablespoons coarse-cut black pepper
- 2 tablespoons olive oil

- Blend ginger, shallots, garlic with a half cup of water; squeeze the juice out and mix in the cornstarch, oyster sauce, sesame oil and salt.
- Pour mixture on the chicken and mix well. Marinate for one hour.
- Drain and bake the marinated chicken in a hot oven (165 degree celcius) for 20 minutes or until cooked.
- Heat olive oil in wok and stir fry the chopped garlic until fragrant. Add the black pepper and stir fry for 5 seconds.
- Pour in the plum sauce mix. When the sauce boils, add the cooked chicken and continue to cook until well mixed. (Add more plum sauce, sugar or salt to taste).
- Serve with rice and steamed vegetables.
