Ingredients
- ¼ cup cottage cheese (smooth or blended)
- 2 tbsp cocoa powder
- 2 tbsp flour (all-purpose, almond, or oat flour)
- 2 tbsp sweetener (sugar, honey, or maple syrup)
- 1 egg (or flax egg for vegan)
- 1 tsp vanilla extract (optional)
- Pinch of salt
- Optional add-ins: chocolate chips, nuts, berries, or coconut flakes
Instructions
- Lightly grease a microwave-safe mug or ramekin with butter or non-stick spray.
- Blend cottage cheese until smooth.
- Mix dry ingredients in a separate bowl.
- Combine wet and dry ingredients gently; fold in optional add-ins.
- Pour batter into the prepared mug/ramekin.
- Microwave in 40–60 second intervals, checking doneness. Center should be slightly soft for fudgy texture.
- Let rest 1–2 minutes.
- Serve warm; optionally top with berries, nuts, chocolate drizzle, or yogurt.
