
Peach Honey Dijon Balsamic Vinaigrette – Sweet, Tangy & Perfectly Balanced

Ingredients
- 1 large ripe peach (or 1 cup thawed frozen peach slices)
- 3 tbsp balsamic vinegar (or white balsamic for lighter flavor)
- 2 tsp Dijon mustard
- 2–3 tbsp honey (adjust to taste)
- ½ cup extra virgin olive oil
- Salt & black pepper, to taste
- Optional: fresh herbs (basil, mint, thyme), 1 small shallot, pinch red pepper flakes
Instructions
- Prepare the Peach – Peel, pit, and chop the peach (or thaw frozen slices).
- Blend Base – In a blender, combine peach, balsamic vinegar, Dijon mustard, honey, salt, and pepper. Blend until smooth.
- Emulsify – With the blender running, slowly drizzle in olive oil until the vinaigrette becomes silky and well-emulsified.
- Taste & Adjust – Add more honey for sweetness, vinegar for tang, or mustard for sharpness.
- Chill – Transfer to a glass jar and refrigerate for at least 30 minutes before serving. Shake well before each use.
Notes
- Fruit Options: Swap peaches for nectarines, apricots, or mangoes.
- Vegan-Friendly: Use maple syrup or agave instead of honey.
- Spicy Kick: Add a pinch of chili flakes or a bit of fresh chili.
- Creamy Twist: Blend in 1 tbsp Greek yogurt for a thicker, creamier dressing.
- Storage: Refrigerate up to 1 week. Do not freeze. Shake or whisk before serving.
