Fried Potatoes, Onions, and Smoked Polish Sausage

This rustic and flavorful dish features crispy fried potatoes, sweet caramelized onions, and savory smoked Polish sausage all cooked in one skillet. It’s quick to prepare, family-friendly, and perfect for breakfast, lunch, or dinner. Great on its own or served with eggs or a side of sauerkraut!

Ingredients:

  • 1 lb (450 g) smoked Polish sausage, sliced into ¼-inch rounds

  • 4 medium potatoes, peeled and diced (Yukon Gold or Russet work well)

  • 1 large onion, sliced or chopped

  • 2–3 tbsp vegetable oil or butter

  • Salt and black pepper, to taste

  • ½ tsp paprika (optional)

  • Fresh parsley, for garnish (optional)

Instructions:

  1. Cook the Potatoes:

    • Heat 1–2 tablespoons of oil or butter in a large skillet over medium heat.

    • Add the diced potatoes and cook, stirring occasionally, for about 10–12 minutes, or until they start to become golden and tender. Season with salt, pepper, and paprika.

  2. Add the Onions:

    • Stir in the onions and cook for another 5–7 minutes, until they are soft and slightly caramelized.

  3. Cook the Sausage:

    • Push the potatoes and onions to the side of the pan. Add the sliced sausage and cook until browned on both sides, about 5 minutes.

    • Mix everything together and let cook for another 2–3 minutes so the flavors meld.

  4. Serve:

    • Garnish with chopped parsley if desired. Serve hot as a main dish or a hearty side.
