Ingredients:

  • 1 tsp Italian seasoning

  • 2 tbsp olive oil

  • 1 tbsp butter

  • 4 cloves garlic, minced

  • 1 package (16 oz/450 g) shelf-stable or refrigerated gnocchi

  • 1 1/4 cups chicken broth

  • 1 cup heavy cream (or half-and-half for lighter option)

  • 1/2 cup grated Parmesan cheese

  • 2 cups baby spinach (optional)

  • Fresh parsley or extra Parmesan, for garnish

Instructions:

  1. Sear the Chicken:

    • Season chicken with salt, pepper, and Italian seasoning.

    • In a large skillet, heat olive oil over medium-high heat.

    • Add chicken and cook until golden and cooked through, about 5–6 minutes. Remove to a plate and set aside.

  2. Sauté the Garlic:

    • In the same skillet, reduce heat to medium.

    • Add butter and garlic, sauté for 30 seconds until fragrant.

  3. Cook the Gnocchi:

    • Add gnocchi and chicken broth. Stir to coat.

    • Cover and cook for 4–5 minutes, or until gnocchi is tender and most of the broth is absorbed.

  5. Combine & Wilt:

    • Return chicken to the skillet.
