Yogurt Cake Recipe
Yogurt cake is a moist and flavorful dessert that uses yogurt as a key ingredient, making it light and fluffy. It’s versatile and can be flavored with various fruits, extracts, or zests.
Ingredients:
- 1 cup plain yogurt (Greek or regular)
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup vegetable oil (or melted butter)
- 1 teaspoon vanilla extract (or almond extract)
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Zest of 1 lemon or orange (optional)
- Powdered sugar for dusting (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- Mix Wet Ingredients:
- In a large mixing bowl, combine the yogurt, sugar, and eggs. Whisk until smooth and well combined.
- Add Oil and Extracts:
- Add the vegetable oil and vanilla extract (or almond extract) to the mixture and whisk until fully incorporated.
- Combine Dry Ingredients:
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and lemon or orange zest (if using).
- Combine Mixtures:
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
- Pour into Pan:
- Pour the batter into the prepared cake pan, spreading it evenly.
- Bake:
- Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Cool and Serve:
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Once cooled, dust with powdered sugar before serving if desired.
