Boiled potatoes are one of the easiest sides and can pair well with steak, chicken, seafood and almost any main dish. A sprinkle of melted butter and olive oil brings out the natural creamy flavor of new potatoes.
1/2teaspoonfreshly ground black pepper, or add to taste
1teaspoonkosher salt, or add to taste
2tablespoonsextra virgin olive oil
2tablespoonsmelted unsalted butter
1tablespoonof salt for salt water
1 1/2poundsnew small potatoes
Instructions
Wash and scrub the potatoes and cut the large potatoes into halves or even quarters until the potatoes are the same size.
Put the potatoes in a pot of water with 1 tablespoon of salt and cover with an inch of water. Bring to a boil, then reduce heat and simmer until potatoes are soft (10-18 minutes depending on size).
Drain the potatoes and return them to the saucepan or mixing bowl.
Drizzle the melted butter and olive oil over the potatoes.
Season to taste with kosher salt and black pepper.
Garnish with fresh chopped parsley and mix. Keep covered until ready to serve.
