Easy Boiled Potatoes Recipe

Boiled potatoes are one of the easiest sides and can pair well with steak, chicken, seafood and almost any main dish. A sprinkle of melted butter and olive oil brings out the natural creamy flavor of new potatoes.

Ingredients
  

  • 2 tablespoons finely chopped parsley, optional garnish
  • 1/2 teaspoon freshly ground black pepper, or add to taste
  • 1 teaspoon kosher salt, or add to taste
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons melted unsalted butter
  • 1 tablespoon of salt for salt water
  • 1 1/2 pounds new small potatoes

Instructions
 

  • Wash and scrub the potatoes and cut the large potatoes into halves or even quarters until the potatoes are the same size.
  • Put the potatoes in a pot of water with 1 tablespoon of salt and cover with an inch of water. Bring to a boil, then reduce heat and simmer until potatoes are soft (10-18 minutes depending on size).
  • Drain the potatoes and return them to the saucepan or mixing bowl.
  • Drizzle the melted butter and olive oil over the potatoes.
  • Season to taste with kosher salt and black pepper.
  • Garnish with fresh chopped parsley and mix. Keep covered until ready to serve.
