Vegetable Potstickers Recipe

These Vegetable Potstickers are delicious little dumplings filled with a mixture of fresh vegetables and served with a savory dipping sauce. They can be steamed or pan-fried for that perfect crispy bottom!

Ingredients:

For the Potstickers:

  • 1 cup cabbage, finely shredded
  • 1 cup carrots, grated
  • 1/2 cup mushrooms, finely chopped
  • 1/2 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 package (about 30) dumpling wrappers (round or square)
  • Cooking oil (for frying)

For the Dipping Sauce:

  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon chili oil (optional)
  • 1 teaspoon sugar (optional)
  • 1 teaspoon green onions, chopped (for garnish)

Instructions:

1. Prepare the Filling:

  • In a large bowl, combine the shredded cabbage, grated carrots, chopped mushrooms, green onions, minced garlic, grated ginger, soy sauce, sesame oil, and rice vinegar. Mix well until all ingredients are evenly combined.

2. Assemble the Potstickers:

  • Take one dumpling wrapper and place about 1 tablespoon of the vegetable filling in the center.
  • Wet the edges of the wrapper with a little water using your finger. Fold the wrapper in half, pinching the edges to seal it tightly. You can pleat the edges for a decorative touch, if desired.
  • Repeat with the remaining wrappers and filling.

3. Cook the Potstickers:

  • Pan-frying method:
    • Heat a large skillet over medium-high heat and add about 2 tablespoons of cooking oil.
    • Place the potstickers in the skillet in a single layer (you may need to do this in batches). Cook for about 2-3 minutes until the bottoms are golden brown.
    • Carefully add 1/4 cup of water to the skillet and cover immediately to steam the potstickers. Cook for about 5-6 minutes until the water has evaporated and the potstickers are cooked through. Remove the lid and cook for an additional 1-2 minutes to re-crisp the bottoms.
  • Steaming method:
    • Place the potstickers in a steamer basket lined with parchment paper. Steam for about 8-10 minutes until cooked through.

4. Prepare the Dipping Sauce:

  • In a small bowl, combine soy sauce, rice vinegar, sesame oil, chili oil, and sugar (if using). Mix well and garnish with chopped green onions.

5. Serve:

  • Serve the potstickers hot with the dipping sauce on the side.

Tips:

  • Make Ahead: You can prepare the filling and assemble the potstickers ahead of time. Store them in the refrigerator or freezer until ready to cook.
  • Add Protein: For added protein, consider mixing in some finely chopped tofu or cooked ground meat.
