Ingredients:

  • 1 lb ground turkey (preferably lean)

  • 1/4 cup fresh parsley, chopped (optional, for garnish)
  • 2 tablespoons tomato paste (optional, for added moisture)

Instructions:

1. Prepare the Vegetables:

  • In a small skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant (about 5-7 minutes). Remove from heat and set aside to cool.

2. Mix the Meatloaf:

  • In a large mixing bowl, combine the ground turkey, crumbled feta cheese, chopped sun-dried tomatoes, breadcrumbs, milk, egg, cooked onion and garlic mixture, dried oregano, salt, and pepper.

3. Shape and Bake the Meatloaf:
